Why Flying Chicken
The name started with a restaurant. The work came back with a new purpose.
Ian Hunter started Flying Chicken as a restaurant in 2012 and ran it for five years. Years later, after beginning to build with modern AI tools, he reopened an old restaurant to-do list: dozens of operational jobs that had once felt daunting and hard to sequence.
He realized how much of that work could now be organized, researched, drafted, tracked, and moved forward with practical systems.
It made him wonder how differently the restaurant might have run with that kind of help.
Today, Ian builds agentic AI workflows, internal tools, research systems, dashboards, and automations across his own operations and client projects. Flying Chicken is the next version of the same idea: helping owner-led businesses turn repeated work and scattered knowledge into systems they can use and own.

How Ian works
Automation should support sound judgment—not hide it.
People stay in the loop.
Consequential decisions and sensitive outputs get the right review and approval points.
Scope stays visible.
Every engagement defines what's included, what isn't, and how changes are handled.
Specialists are brought in when needed.
Flying Chicken does not replace legal, accounting, cybersecurity, compliance, or other specialist review.
